To make an easy peach cobbler, peel and slice about 6 fresh peaches. Toss them with ½ cup sugar, 1 tablespoon lemon juice, 1 teaspoon cinnamon, and 1 tablespoon cornstarch. Pour the mixture into a greased baking dish.
In a separate bowl, combine 1 cup flour, ½ cup sugar, 1 teaspoon baking powder, and a pinch of salt. Cut in ½ cup cold butter, then stir in ¼ cup milk until a soft dough forms. Spoon the topping over the peaches and bake at 375°F for 35–45 minutes, or until golden brown and bubbling. Serve warm—ideally with a scoop of vanilla ice cream.
